Curried Tuna Salad Sandwich
Oh how I've missed a good sandwich since going grain and gluten free, and one of my favorites is a tuna or chicken salad sandwich. This curried tuna salad is creamy, savory and sweet, and has amazing texture thanks to the little pieces of apple in between. This is easy and satisfying and definitely a go-to meal for me during a busy week.
Ingredients
- Grain-free Sandwich Bread (click for recipe), (grain-free bread of choice)
- 10 oz10 oz10 oz Canned Tuna, (2 cans)
- .25 cup.25 cup.25 cup Avocado Oil Mayonnaise
- 1 Tbsp1 Tbsp1 Tbsp Plain Greek Yogurt, (optional)
- 1 tsp1 tsp1 tsp Curry Powder
- 1 tsp1 tsp1 tsp fresh Dill, chopped (optional)
- .25 cup.25 cup.25 cup organic Apple, diced (or golden raisins)
- .25 cup.25 cup.25 cup Red Onion, chopped
- .25 cup.25 cup.25 cup Cilantro, chopped

- Mix all ingredients together until creamy and well combined.
- Taste and adjust seasonings as needed.
- Chill in the fridge.
- Toast two slices of grain-free bread and place tuna salad, romaine, tomatoes and anything else you'd like on top. Enjoy!
