Dump Cake (Paleo/Gluten Free) (Edit recipe)

Dump cake and while the name isn’t super inviting, once you smell it baking in the oven, you will be convinced about how delicious this is. Made with a few simple ingredients and the new Legit Bread Company Vanilla Cake Mix. The end result is similar to a cobbler but with a cake-like topping. It’s aptly named since you literally dump everything in the cake pan, bake then enjoy!

  • .5 cup Powdered Sugar, can sub maple powdered sugar
  • 1 Tbsp Milk, or milk of choice
  • 1 - 2 tsp Mint Leaves, finely chopped

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 350° and place a 9” x 13” cake pan on a baking sheet, in the event any goodness bubbles over while baking, this will catch the spillage.
  2. Make the cherry layer by adding the frozen cherries, sugar, flour, lime juice and salt to a heavy bottom saucepan, stirring to combine well and coat the cherries. Place the pan over medium heat, stirring occasionally until warmed and thickened. Typically about 5-7 minutes, depending on pan size, remove from the heat.
  3. Pour cherry filling onto the bottom of the cake pan, followed by the pineapple, swirling slightly to incorporate.
  4. Sprinkle the entire bag of cake mix evenly on top of the fruit, then drizzle the melted ghee*, back and forth over the top of the dry layer. If you’re using pecans and sugar, sprinkle those evenly on top.
  5. Place in your oven and bake for approximately 55-65 minutes or until the top is golden brown and the fruit is bubbly.
  6. Remove from the oven and allow to cool slightly before serving. If you’re going to add the optional drizzle, mix that up in a small bowl before serving and drizzle on top. Serve with your favorite ice cream and a sprinkle of little mint.

Notes

Dump cake normally calls for canned cherry pie filling, which you can of course still use, but making your own is so easy and you can control the ingredients.
Melted ghee/butter: You can up ½ - ¾ cup here, it’s really a personal preference. Using a ½ cup does the job, but if you want a less “crumbly” top go for the ¾ cup. Please note, it may take an additional 5-7 minutes to get golden brown.
