This simple Carnitas-style recipe is easy make and so delicious to eat! Simply seasoned with Primal Palate Adobo Seasoning makes it a meal option for those who cannot eat nightshades! Serve with rice, beans, fresh lime and cilantro for a delicious meal.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to bake at 300 F.
  2. Place the pork in an oven safe pot for slow cooking, and liberally season your pork shoulder with Adobo seasoning, or your choice of spices, on all sides.
  3. Pour the juice of two oranges and one lime over the meat, cover with a lid, and place in the oven to slow cook.
  4. The pork roast will be finished when it can easily be shredded with a fork. This will take about 3 hours for a smaller roast.
  5. Once the pork easily pulls apart, shred it with two forks, and toss with the juices and fat that rendered from cooking.
  6. Turn the oven temperature up to 350, and place the pork back in the oven to crisp up for 30 minutes.
  7. Once 30 minutes has passed, remove from the oven, allow to cool just slightly, and then sprinkle chopped fresh cilantro over the meat, and stir to combine.
  8. Serve with rice and beans, if desired, and any veggies you would like.
