Elote (Mexican Street Corn) with Spice Witch Chili Crisp
This bold and spicy elote takes Mexican street corn to the next level: grilled, creamy, and topped with a generous spoonful of Spice Witch Chili Crisp for a smoky, crispy crunch in every bite.
Ingredients
- 4 whole4 whole4 whole Corn, ears of fresh corn on the cob, husks removed
- 2 Tbsp2 Tbsp2 Tbsp Mayonnaise
- 1 Tbsp1 Tbsp1 Tbsp Sour Cream, or crema
- 1 Tbsp1 Tbsp1 Tbsp Spice Witch Original Chili Crisp, plus more for topping
- 1/2 cup1/2 cup1/2 cup Cotija Cheese, crumbled (or feta in a pinch)
- 1 clove1 clove1 clove Garlic, finely grated

- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 1 bunch1 bunch1 bunch Cilantro, chopped, for garnish
- 1 whole1 whole1 whole Lime, cut into wedges, for serving

- 1 pinch1 pinch1 pinch Salt, to taste

- 1 pinch1 pinch1 pinch Chili Powder, optional, or Tajín

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Grill the corn over medium-high heat, turning occasionally, until lightly charred all around, about 8 to 10 minutes.
- While the corn grills, mix the sauce: stir together the mayo, sour cream, garlic, lime juice and 1 tablespoon of Spice Witch Chili Crisp.
- When the corn is done, brush or spoon the sauce generously over each ear while it is still warm.
- Sprinkle with cotija, a little salt, and chili powder if using.
- Top with extra chili crisp (don’t be shy) and chopped cilantro. Serve with lime wedges.
Notes
Best eaten straight off the cob. Pairs well with grilled meats, tacos, or nothing at all, because it is the main event.
