This Grilled Honey Mustard Elote puts a delicious twist on traditional Mexican street corn. Fresh sweet corn is grilled until lightly charred, then coated in a creamy sauce made with mayonnaise, True Made Foods Honey Mustard, fresh lime juice, and garlic.   1. In a small bowl, whisk together the mayonnaise, True Made Foods Honey Mustard, lime juice, garlic powder, and sea salt until smooth and creamy.
  2. Taste and adjust the lime juice or salt as needed.
  3. Set aside.
  4. Preheat the grill to medium-high heat.
  5. Peel back the husks and remove as much of the silk as possible, leaving a thin layer of husks attached to the corn.
  6. Fold the husks back over the ears.
  7. Place the corn directly on the grill grates and cook for 12 to 15 minutes, turning occasionally, until the corn is tender.
  8. During the last few minutes of cooking, peel back the remaining husks and continue grilling until the kernels develop light char marks in spots.
  9. Transfer the hot corn to a serving platter. While still warm, generously brush or spread the honey mustard mayo mixture over each ear of corn.
  10. Sprinkle with cotija cheese and chili lime seasoning.
  11. Serve immediately.
