Honey-Glazed Chicken Skewers with Peppers + Mushrooms
These Honey-Glazed Chicken Skewers are summer on a stick. Juicy chicken, charred veggies, and a sweet-heat glaze made with Spice Witch Hot Honey, all grilled to perfection. Easy to throw together, impossible to stop eating.
Ingredients
- 1.5 lb1.5 lb1.5 lb Chicken Thighs, Boneless Skinless, cut into chunks

- 2 whole2 whole2 whole Bell Pepper, any color, cut into 1.5 inch pieces

- 8 oz8 oz8 oz Crimini Mushrooms, or button, stems trimmed
- 2 Tbsp2 Tbsp2 Tbsp Spice Witch Chili Oil
- 1 pinch1 pinch1 pinch Salt, to taste

- 1 pinch1 pinch1 pinch Black Pepper, to taste

- 3 Tbsp3 Tbsp3 Tbsp Spice Witch Hot Honey, for the glaze
- 1 Tbsp1 Tbsp1 Tbsp Soy Sauce, or tamari, for the glaze

- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar, for the glaze
- 1 clove1 clove1 clove Garlic, grated, for the glaze

- 1/2 tsp1/2 tsp1/2 tsp Smoked Paprika, optional, for the glaze

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the grill to medium-high. If using charcoal, let the coals burn down until ashy. If using wooden skewers, soak them in water for 30 minutes.
- Toss the chicken and veggies in Spice Witch Chili Oil, salt and pepper. Thread onto skewers, alternating chicken, peppers and mushrooms.
- Mix the glaze ingredients in a small bowl. Set aside half for brushing while grilling and half for drizzling or dipping.
- Grill the skewers 10 to 12 minutes, turning every few minutes. Brush with glaze during the last 5 minutes so it gets sticky and caramelized.
- Finish with a final drizzle of glaze straight off the grill and serve hot.
Notes
Serve with grilled flatbread, corn on the cob, or a big summer salad.
