Flourless White Chocolate Strawberry Muffins
A high protein snack that is made WITHOUT protein powder! These muffins get a protein & fiber boost from beans, making them completely flourless!
Ingredients
- 15 oz15 oz15 oz Chickpeas, drained
- 3 whole3 whole3 whole Eggs
- 0.5 cup0.5 cup0.5 cup Pure Maple Syrup
- 0.5 cup0.5 cup0.5 cup Unsweetened Cashew Butter
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 tsp1 tsp1 tsp Baking Soda
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 0.333 cup0.333 cup0.333 cup Strawberries, chopped
- 0.333 cup0.333 cup0.333 cup Sugar Free White Chocolate Chips

- Preheat oven to 350 degrees.
- Line a muffin tin with liners.
- Add chickpeas, eggs, maple & cashew butter to a blender or food processor.
- Blend until smooth.
- Pulse in vanilla, baking soda & salt.
- Add white chocolate & strawberries & stir to combine.
- Fill muffin tin 3/4 way full.
- Bake for 25-30 minutes.
