Gluten Free Avocado Brownies
Avocado in brownies?! Yes you heard that right. This inconspicuous addition to a classic dessert results in some very delicious brownies. We couldn't get enough of this recipe, and know you will, too!
Ingredients
- 1/2 cup1/2 cup1/2 cup Semi-Sweet Chocolate Chips, melted

- 1/2 cup1/2 cup1/2 cup Cocoa Powder, sifted

- 1/2 cup1/2 cup1/2 cup Cassava Flour, sifted

- 1 cup1 cup1 cup Maple Sugar, sifted

- 1/2 tsp1/2 tsp1/2 tsp Baking Soda
- 1/2 tsp1/2 tsp1/2 tsp Himalayan Pink Salt

- 3 whole3 whole3 whole Eggs
- 1 whole1 whole1 whole Avocado, ripe
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil
- 2 tsp2 tsp2 tsp Pure Vanilla Extract

- 1/4 cup1/4 cup1/4 cup Semi-Sweet Chocolate Chips

- 1/2 tsp1/2 tsp1/2 tsp Kosher Flake Salt - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to bake at 350 degrees.
- Grease an 8x8 baking pan with avocado oil
- Using a double boiler, melt 1/2 cup of chocolate chips. Remove from the heat, and allow to cool slightly.
- In a large mixing bowl, sift together the cocoa powder, cassava flour, maple sugar, baking soda, and salt.
- In a small mixing bowl, blend together the eggs, avocado, avocado oil with a hand mixer.
- Add the wet ingredients into the dry, and blend until smooth.
- Add in the melted chocolate, and blend again until smooth.
- Pour the brownie batter into your prepared baking dish, and smooth into an even layer.
- Sprinkle the 1/4 of chocolate chips over the top of the brownies, and bake for 20-25 minutes at 350.
- Once the brownies come out of the oven, allow to cool for about 5 minutes, and then sprinkle with the flake salt.
Notes
To measure the cassava flour, we recommend using a spoon to gently scoop the cassava flour into your measuring cup, to avoid packing the cup with flour.
