Gluten-Free S’mores Cookie Bars
Forget the s'mores! These S'mores Cookie Bars will be your go-to dessert this summer. All you need is to make our gluten-free cookie dough, and mix in chocolate chips, chopped chocolate, graham crackers, and marshmallows. The whole family will love this recipe!
Ingredients
- 210 grams210 grams210 grams Gluten-Free All-Purpose Flour - Primal Palate

- 1/2 tsp1/2 tsp1/2 tsp Baking Soda
- 1/2 tsp1/2 tsp1/2 tsp Himalayan Pink Salt - Primal Palate

- 113 grams113 grams113 grams Butter, Unsalted, one stick, softened to room temperature

- 100 grams100 grams100 grams Granulated White Sugar, 1/2 cup

- 70 grams70 grams70 grams Brown Sugar, 1/3 cup, packed
- 1 whole1 whole1 whole Egg, one large egg at room temp
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 3/4 cup3/4 cup3/4 cup Semi-Sweet Chocolate Chips

- 3/4 cup3/4 cup3/4 cup Gluten-Free Graham Crackers - Schär, chopped
- 3/4 cup3/4 cup3/4 cup Milk Chocolate Bar, chopped
- 3/4 cup3/4 cup3/4 cup Mini Marshmallows

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to bake at 350 degrees Fahrenheit.
- Line a 9x9 baking pan with parchment paper for easy removal.
- In a small mixing bowl, weigh the flour, baking soda and salt. Whisk to combine.
- In the bowl of your stand mixer, add the butter, white sugar and brown sugar. Beat on medium speed to cream the butter and sugar.
- Add in the egg and vanilla, and beat again, scraping down the bowl as needed to combine the ingredients.
- Pour the flour mixture into the butter and sugar mixture, and beat again on medium speed to evenly combine the cooking dough, scraping down the bowl as needed.
- Remove the bowl from the stand mixer, and add in 1/2 cup of the chocolate chips, 1/2 cup of the chopped gluten-free graham crackers, 1/2 cup of the chopped milk chocolate bar, and 1/2 cup of the mini marshmallows. Reserve the remaining 1/4 cup of each for topping.
- Stir to mix in the chocolate, graham crackers, and marshmallows evenly into the cookie dough.
- Pour the cookie dough from the bowl into the prepared baking pan, and press the dough into the pan into an even layer. I find using your hands works best for this.
- Top the cookie dough with the remaining chocolate chips, milk chocolate, and graham crackers. Save the marshmallows for right before the cookie bars come out of the oven.
- Cook the cookie bars for 30 minutes at 350, in the center of the oven, on the middle rack.
- 1 minute before the cookies are finished, top the cookie bars with the remaining marshmallows so that they are hot and puffy when the cookie bars are finished.
- Allow to cool, slice, and enjoy.
