This is the ultimate grilled chicken salad featuring all of my favorite summer ingredients!  Simple, beautiful, and incredibly delicious.  ENJOY!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Make the chicken marinade by adding the avocado oil, coconut aminos, balsamic vinegar, and salt to a small bowl and mix until fully combined.
  2. Marinate the chicken for 8 – 24 hours.
  3. Make the roasted walnuts by combining the olive oil and the coconut sugar until fully combined.
  4. Coat the walnuts with the sugar and oil. Place on a cookie sheet and bake at 300 for 20 minutes.
  5. Add all of the ingredients for the dressing in a small mixing bowl. Mix until smooth and fully combined. Set aside.
  6. Preheat the grill to high heat, roughly 550° F.
  7. Grill the chicken for 4 minutes, flipping only once, then grill for an additional 3-4 minutes on the other side.
  8. Set the chicken aside.
  9. Add the lettuce, strawberries, and sweet corn to a large mixing bowl.
  10. Evenly coat the salad with the dressing.
  11. Slice the chicken.
  12. Plate the salad and top with the goat cheese, walnuts, and chicken.
  13. ENJOY!
