Spring Salad with Tahini Habanero Berry Dressing
Spring brings a freshness to everything and this salad recipe is bursting with freshness! It is a vibrant colorful salad with Kale, purple cabbage and carrots. The dressing has tahini and a special ingredient - Berry Habanero jelly!
Ingredients
- 2 cups2 cups2 cups Kale, chopped
- 0.5 cup0.5 cup0.5 cup Carrots, grated
- 1 cup1 cup1 cup Red Cabbage, shredded
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 0.5 cup0.5 cup0.5 cup Cannellini Beans
- 2 Tbsp2 Tbsp2 Tbsp Tahini
- 1 Tbsp1 Tbsp1 Tbsp Maple Syrup - Under the Bark Syrup Co.
- 1 tsp1 tsp1 tsp Garlic Powder - The Spice Lab
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 2 tsp2 tsp2 tsp Berry Habanero Jam - Profanity Jam, You can use less for a mild taste
- 2 Tbsp2 Tbsp2 Tbsp Water, as needed
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all the vegetables for the salad to a large mixing bowl. Add the lemon juice and the extra virgin olive oil. Sprinkle the sea salt on top. Now with your hands, massage the oil and lemon juice into the kale leaves. Do this for 5 minutes. Keep this bowl aside for 15 minutes.
- For the dressing:
- Take a small mixing bowl and add all the dressing ingredients except the water and mix until thick. Now slowly add water 1 tsp at a time and continue to whisk until you get a creamy dressing of your preferred consistency.
- Serving the salad:
- Divide the salad into individual serving bowls and pour the dressing over the salad. Add more Habanero Berry jelly on top if desired.
