halloween protein brownie bites
BOO! wooh, sorry for spooking you. these jack-o-lantern brownie bites are such a fun halloween treat & of course they are full of protein & chocolatey goodness.
Ingredients
- 1 cup1 cup1 cup Organic Cottage Cheese
- 222 Egg
- 0.5 cup0.5 cup0.5 cup Organic Creamy Peanut Butter, or nut butter of choice
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate
- 0.5 cup0.5 cup0.5 cup Chocolate Protein Powder - Be Well by Kelly
- 0.5 cup0.5 cup0.5 cup Raw Cacao Powder
- 2 Tbsp2 Tbsp2 Tbsp ground Psyllium husk
- 0.5 cup0.5 cup0.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Baking Soda
- 1 pinch1 pinch1 pinch Redmond Real Salt
- 0.25 cup0.25 cup0.25 cup Water
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Unsweetened Cashew Butter, I used Nucolato white chocolate spread
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- in a food processor, combine cottage cheese, eggs, peanut butter, & vanilla extract.
- in a large bowl, whisk together remaining ingredients except water, chocolate chips, & frosting.
- pour cottage cheese mixture into dry ingredients, then add in water until reaches desired consistency.
- using a large cookie scoop, add brownie batter to a silicon muffin tin.
- add chocolate chips to each brownie.
- bake for 16-20 minutes or until a toothpick comes out clean.
- in a bowl, mix frosting; refrigerate until bites are completely cooled.
- add frosting to a zip lock bag, then cut a small bit off the corner of your zip lock bag; drizzle frosting onto each bite to make a spooky monster!
