Healthy Chilled Cucumber Pasta Salad
This healthy, easy, high-protein, chilled pasta salad is truly the perfect dish to make this summer. It comes together in less than 20 minutes - by the time you prep your ingredients, your pasta will be done and you can throw it all together. I think this is best served chilled from the fridge, so give it at least 30 minutes to an hour to chill before serving. But you can also serve it fresh since you'll cool the pasta quickly and it will be colder than room temperature. I think this would be perfect for meal prep with some grilled chicken or grilled shrimp, too!
Ingredients
For The Pasta
- 8 oz8 oz8 oz farfalle pasta
- 0.5 whole0.5 whole0.5 whole White Onion
- 1 whole1 whole1 whole English Cucumber, seeded & sliced thin
For The Dressing
- 0.75 cup0.75 cup0.75 cup Plain Greek Yogurt, full fat
- 0.25 cup0.25 cup0.25 cup Mayonnaise
- 2 Tbsp2 Tbsp2 Tbsp White Vinegar, Distilled
- 2 Tbsp2 Tbsp2 Tbsp Dill, Fresh
- 1 tsp1 tsp1 tsp Granulated White Sugar

- 0.5 tsp0.5 tsp0.5 tsp Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- Cook your pasta according to package instructions.
- While the pasta is cooking, add all dressing ingredients to a bowl. Mix well to combine and set aside.
- Slice your cucumber thin and place in a bowl of water.
- Sliced your cucumbers thin.
- Once the pasta is finished, rinse with cold water to cool off quickly.
- Combine pasta, dressing, onion and cucumber.
- Toss to combine.
- Serve right away or let chill for at least 30 minutes in the fridge and serve cold!
