Dirty Martini Pasta Salad
This pasta salad is light, refreshing, salty, tangy and perfect as a side to a bbq spread. It also makes a really easy weeknight dinner with grilled chicken or grilled shrimp! It's not like your typical pasta salad where it has a lot of mix-in's and toppings, but if you can appreciate olives, you can appreciate this pasta salad. Also, you don't need to love olives to like this! My husband is not an olive person at all, but he gladly ate this!
Ingredients
- 0.5 lb0.5 lb0.5 lb Pasta

- 1 cup1 cup1 cup Castelvetrano Olives, pitted and chopped
- 0.5 cup0.5 cup0.5 cup Feta Cheese
- 0.333 cup0.333 cup0.333 cup Extra Virgin Olive Oil
- 0.25 cup0.25 cup0.25 cup Olive Juice (Green)
- 1 whole1 whole1 whole Garlic, clove, minced

- 1 whole1 whole1 whole Lemon, zested and juiced

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper, to taste

- Cook the pasta according to package instructions. Drain and rinse with cold water.
- While the pasta is cooking, mix together dressing ingredients.
- Add olive oil, olive brine, minced garlic, lemon zest, lemon juice, and black pepper to a jar or bowl. Mix or whisk until combined.
- In a large bowl, combine cooked pasta, chopped olives, and feta cheese.
- Pour dressing over the mixture and toss until well combined.
- Feel free to add anything else it needs.
- Serve chilled!
