Minestrone Soup (Freezer Friendly)
As a soup loving gal who is also prepping meals to have frozen for postpartum, this minestrone is freezer friendly and delicious! I wound up freezing 4 servings, and had a couple servings of it freshly made. It's delicious, full of veggies and only requires a little bit of chopping. You can add some other things if you'd like (I think corn would be a good addition) to make it even more filling. I love to serve this fresh with fresh grated parmesan cheese. For freezing - let the soup cool and add about 2.5 ladels full to your Souper Cubes. Freeze the soup and then transfer to a ziploc bag for the freezer.
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp1 Tbsp1 Tbsp Garlic, minced

- 1 whole1 whole1 whole Yellow Onion, diced
- 3 whole3 whole3 whole Celery, stalks, diced
- 3 whole3 whole3 whole Carrots, sliced
- 1 whole1 whole1 whole Potatoes, White, diced into small cubes
- 32 oz32 oz32 oz Fire Roasted Crushed Tomatoes
- 15 oz15 oz15 oz Kidney Beans
- 12 oz12 oz12 oz Green Beans, trimmed and cut into 1in pieces
- 6 cup6 cup6 cup Chicken Broth, can do vegetable or beef

- 1 tsp1 tsp1 tsp Italian Seasoning

- 0.5 tsp0.5 tsp0.5 tsp Himalayan Pink Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- 2 cup2 cup2 cup Baby Spinach
- 1 cup1 cup1 cup Ditalini

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add olive oil to a large pot over medium heat.
- Add in garlic, onion, carrot, celery and potatoes. Stir occasionally until onions and garlic become fragrant.
- Add in crushed tomatoes, kidney beans, broth and seasonings. Stir, lower the heat and cook on low for 10 minutes.
- Add the green beans, spinach and pasta. Bring to a boil and let simmer for 10 minutes.
- Serve immediately with fresh grated parmesan.
- For freezing - let cool and add 2.5 ladles to your silicone trays. Freeze until solid.
- Transfer to a ziplock and freeze for up to 3 months.
