- If using wooden skewers, place them in a long dish or baking pan filled with water and soak for at least 30 minutes to prevent burning.
- In a medium bowl, whisk together the honey mustard, garlic, onion powder, salt, pepper, and olive oil until smooth. Reserve about one-third of the sauce in a separate bowl for basting.
- Add the chicken to the remaining marinade and toss until evenly coated. Cover and refrigerate for at least 20 minutes, or up to 4 hours for maximum flavor.
- Thread the marinated chicken, pineapple chunks, bell peppers, and red onion onto the skewers, alternating ingredients as desired.
- Preheat your Traeger grill to 425°F.
- Place the skewers directly on the grill grates and cook for 25 to 35 minutes, flipping halfway through cooking.
- During the last 10 minutes of cooking, brush the skewers with the reserved honey mustard sauce. Baste once after flipping and again during the final few minutes for a sticky, flavorful glaze.
- Remove the skewers from the grill once the chicken reaches an internal temperature of 165°F.
- Serve immediately and enjoy!
