  1. - Make the jerky marinade
  2. Whisk together soy sauce, liquid smoke, smoked paprika, garlic powder, maple syrup, and apple cider vinegar. Pat the jackfruit dry, shred into strips, and toss in the marinade.
  3. - Marinate the jackfruit
  4. Let marinate for at least 20 minutes or up to 2 hours in the refrigerator.
  5. - Bake the jerky
  6. Preheat oven to 375°F (190°C). Spread jackfruit on a parchment-lined baking sheet and bake for 25–27 minutes, flipping halfway through, until caramelized and slightly chewy.
  7. - Grill the sausages
  8. Grill hot dogs, bratwursts, or vegan sausages over medium-high heat for 6–8 minutes, turning occasionally. Toast buns for about 1 minute.
  9. - Assemble & serve
  10. Place a sausage in each bun. Top with sauerkraut, smoky jackfruit jerky strips, diced onion, and mustard. Serve immediately and enjoy!
