- In a small saucepan, combine the strawberries, sugar (or honey), cardamom pods, and water.
- Bring to a gentle simmer over medium-low heat. Cook for 8–10 minutes, stirring occasionally, until the strawberries are very soft and the mixture is syrupy.
- Remove from heat.
- Option 1 (quick method): Remove the cardamom pods and blend until smooth.
- Option 2 (more preferred method): Let the mixture cool completely with the cardamom pods still in it to deepen the flavor, then remove pods and blend.
- Transfer to an airtight jar and refrigerate for up to 1 week. Should make 2-3 lattes depending on how much syrup you use.
- To assemble the latte - in a small cup, whisk the matcha powder with 3-4 tablespoons hot water until smooth and lump-free.
- Add ice to a glass. Pour in the milk and vanilla syrup (if using), then add the prepared matcha. Stir gently to combine.
- In a small cup, combine the half-and-half and strawberry syrup. Use a handheld frother (or shake in a jar) until thick and creamy.
- Spoon or pour the strawberry cold foam over the matcha latte. Serve immediately and enjoy!
Notes
Use dairy-free milk and creamer if preferred. Adjust syrup to taste depending on how sweet you like your drinks.
