Keto Gumbo
I call this dish Keto Gumbo because the carbs are from veggies - which don’t hit the same as carbs from grains. But, you can easily add cauliflower rice or rice to this dish for a more traditional feel. Full of flavor you will love the Cajun flare in each bite. Typically this dish takes hours to cook, but this version is speedy enough for a weeknight dinner.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 2 pieces2 pieces2 pieces Celery, Diced
- 2 whole2 whole2 whole Bell Pepper, Any colors, diced
- 1 pieces1 pieces1 pieces Zucchini, Diced
- 4 cloves4 cloves4 cloves Garlic, Minced
- 6 oz6 oz6 oz Andouille Sausage, Precooked and sliced
- 14 oz14 oz14 oz Diced Tomatoes
- 4 cups4 cups4 cups Chicken Broth, More if you want it soup consistency
- 3 cups3 cups3 cups Chicken Breast, Cooked and chopped
- 1 Tbsp1 Tbsp1 Tbsp Creole Seasoning, or Jerk, or Blackened seasoning
- 1 tsp1 tsp1 tsp Chili Powder
- .5 tsp.5 tsp.5 tsp Red Pepper Flakes
- 1 Tbsp1 Tbsp1 Tbsp Parsley
- 1 Tbsp1 Tbsp1 Tbsp Oregano, Dried
- 1 Tbsp1 Tbsp1 Tbsp Thyme, Dried
- 1 tsp1 tsp1 tsp Sea Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 2 pieces2 pieces2 pieces Green Onion (Scallion), Sliced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large Dutch oven on medium heat add oil, onion, celery, bell peppers, and zucchini. Stir and cook for 7-8 minutes.
- Add garlic and andouille sausage, stir and cook for 5 minutes.
- Add tomatoes, broth, chicken, and all seasonings. Stir and cook for 15 minutes, stir periodically.
Notes
Rotisserie chicken works great for this dish, easy to pull off the breasts and chop them up.
