I call this dish Keto Gumbo because the carbs are from veggies - which don’t hit the same as carbs from grains. But, you can easily add cauliflower rice or rice to this dish for a more traditional feel. Full of flavor you will love the Cajun flare in each bite. Typically this dish takes hours to cook, but this version is speedy enough for a weeknight dinner.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large Dutch oven on medium heat add oil, onion, celery, bell peppers, and zucchini. Stir and cook for 7-8 minutes.
  2. Add garlic and andouille sausage, stir and cook for 5 minutes.
  3. Add tomatoes, broth, chicken, and all seasonings. Stir and cook for 15 minutes, stir periodically.

Notes

Rotisserie chicken works great for this dish, easy to pull off the breasts and chop them up.
