Korean Ginger Cinnamon Punch (SuJeongGwa)
SuJeongGwa is a traditional dessert drink enjoyed over the Fall and Winter, especially during the major holidays. This spicy sweet punch is best served icy cold, and it’s a great treat to have around for when you have guests over. The ginger cinnamon combo is not only delicious, it’s great for digestion and gut health!
Ingredients
- 8 cup8 cup8 cup Water
- 6 whole6 whole6 whole Cinnamon Stick, Whole
- 0.25 cup0.25 cup0.25 cup Ginger Root, sliced

- 0.5 cup0.5 cup0.5 cup Coconut Sugar

- 0.25 cup0.25 cup0.25 cup Honey

- 0.25 cup0.25 cup0.25 cup Pine Nuts, for garnish (optional)

- Combine water, cinnamon sticks, and fresh ginger slices in a large pot. Heat over high heat until it comes to a boil.
- Reduce the heat to medium low, cover, and simmer for 30 minutes.
- Use a small mesh strainer to remove and discard the cinnamon sticks and ginger slices.
- Add coconut sugar and honey, and stir. Let this simmer for 10 additional minutes until the sugar is fully dissolved.
- Remove from the heat and let the punch cool to a room temperature, then chill in the refrigerator.
- When ready to serve, pour into a glass and sprinkle with pine nuts.
