- Beat together your eggs and lemon juice and sugar.
- Stir in protein powder, almond flour, and pancake mix.
- Add in melted dairy free butter.
- Finish off batter with some white chocolate chips and lemon zest.
- Pour batter into greased 8x8 pan.
- Bake at 350°F for 25-30 minutes and let cool completely before adding optional icing and serving!
