Dairy-Free Smores Cookies
These dairy free s’mores cookies are such a fun summer dessert recipe! They are a simple dessert recipe, and so fun to make for family and friends. Smores desserts are my favorite summer flavor, and it’s shockingly easy to make dairy free!
Ingredients
- 6 whole6 whole6 whole Graham Crackers, Halves
- 6 whole6 whole6 whole Vegan Marshmallows, Vanilla

- 6 Tbsp6 Tbsp6 Tbsp Vegan Buttery Spread
- 0.5 cup0.5 cup0.5 cup Brown Sugar
- 1 whole1 whole1 whole Egg
- 0.75 cup0.75 cup0.75 cup Pancake Mix

- 0.25 cup0.25 cup0.25 cup 55% Cacao Organic Vegan Semi-Sweet Dark Chocolate Chips (Bulk) - Pascha Chocolate Co.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- First, make your cookie dough.
- Do this by beating together your dairy free butter with sugar.
- Add in your egg and beat until emulsified.
- Stir in the pancake mix (this is a shortcut, you can use flour and baking powder instead if needed) until a batter forms.
- Stir in chocolate chips.
- Place 6 graham cracker halves on a lined baking sheet.
- Top each one with a marshmallow.
- Wrap each graham cracker marshmallow square in cookie dough - it’s okay if it just wraps around the top.
- Bake at 325°F for 12-14 minutes, and let cool completely!
