These lemon baked oatmeal bars are gluten-free & vegan but also are loaded up with filling protein, making them ideal for breakfast prep or for a easy snack!
Ingredients

- 0.25 cup0.25 cup0.25 cup Vegan Protein Powder
- 0.25 cup0.25 cup0.25 cup Lemon Juice
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 1.5 cups1.5 cups1.5 cups Almond Milk
- 8 oz8 oz8 oz Kite Hill Cream Cheese
- 0.25 cup0.25 cup0.25 cup Kite Hill Vanilla Greek-style Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 0.25 cup0.25 cup0.25 cup Powdered Monkfruit Sweetener - Lakanto

- Preheat oven to 350 degrees and prepare an 8x8 baking dish.
- In a bowl, mix together rolled oats, yogurt, protein powder, lemon juice, maple syrup and almond milk.
- Spread into pan and bake for 40-45 minutes.
- Whip together cream cheese, yogurt, lemon juice, and powdered sugar.
- Once bars have cooled, spread on frosting and slice.
