cottage cheese is all the rage these days & for good reasons. for one, it's tasty, but it is also a great protein option. it can be made into savory recipes & for this recipe it is incorporated in the "cheesecake" frosting.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 325°F.
  2. in a bowl, combine oats, nuts/seeds, & sea salt.
  3. in a sauce pan over medium heat, melt butter or oil.
  4. remove from heat, then add nut butter, honey/maple syrup, granulated sweetener, & vanilla extract to melted butter or oil.
  5. using a large spatula, thoroughly mix wet ingredients into dry ingredients.
  6. add granola to a quarter-sheet baking sheet.
  7. bake for 10 minutes, then take it out and mix thoroughly.
  8. press down mixture very firmly, then bake for an additional 15 minutes.
  9. once the granola is done baking, press firmly again. allow it to cool completely.
  10. in a food processor, combine frosting ingredients.
  11. add a thin layer on top of cooled granola + sprinkle on freeze-dried berries.
  12. put in the freezer for at least 30 minutes before breaking into pieces.
  13. i like to store my bark in the freezer.
