Lemon Dijon Sausage & Veggie Sheet Pan Dinner
Everyone is always looking for easy dinner recipes and this one couldn’t be easier (and can fit pretty much any dietary lifestyle!)
This is gluten free, dairy free, and can be made vegan by using a vegan sausage. I make sheet pan dinners all the time and love how versatile they are!
Ingredients
- 3 cups3 cups3 cups Baby Potatoes, quartered
- 2 - 3 cups2 - 3 cups2 - 3 cups Broccoli, chopped
- 0.5 cup0.5 cup0.5 cup Red Onion, roughly chopped
- 1 whole1 whole1 whole Orange Bell Pepper, any color works
- 12 oz12 oz12 oz Chicken Sausage, or vegan sausage, cut into coins
- 3 Tbsp3 Tbsp3 Tbsp Avocado Oil, or olive oil
- 2 Tbsp2 Tbsp2 Tbsp Dijon Mustard
- 1 whole1 whole1 whole Lemon, juiced
- 1 clove1 clove1 clove Garlic, chopped
- 1 tsp1 tsp1 tsp dried Rosemary
- 1 tsp1 tsp1 tsp dried Thyme
- 2 pinch2 pinch2 pinch Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix dressing ingredients into a large bowl and add all of the veggies in and mix.
- Spread on a sprayed baking sheet and bake at 400 for 15 min.
- Add chopped sausage, mix everything together, and bake for another 15 min. Enjoy!!
