lobster mac & cheese
this recipe SCREAMS fancy AF comfort food. 🦞🧀✨
it looks impressive, but it’s surprisingly quick & easy to make. it is a protein + fiber-packed one pot dish (thanks to my favorite GF lupini bean pasta from kaizen foods). it's loaded with lobster, cheese, & get's finished with the best "breadcrumb" alternative ever - bacon + ghee potato chips!
rich, comforting, crunchy, & the perfect recipe when you want something that feels a little extra special.
Ingredients
mac & cheese
- 8 oz8 oz8 oz Low Carb Pasta - Kaizen Foods, any shape

- Water, for boiling pasta
- Blanco Cheese Dip - Drippy Dip, 1 jar + water to thin sauce

- Salt and Pepper
- 1 lb1 lb1 lb Lobster, cooked & chopped

- 6-86-86-8 oven-baked bacon (click for recipe)
- 1.5-2 cups1.5-2 cups1.5-2 cups Ghee Potato Chips - Ghips, use any potato chip flavor

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 375.
- bring a pot of water to a boil, then add in lupin bean noodles & boil for 5-6 minutes (watch carefully, because it will boil over!)
- strain noodles & rinse well.
- transfer noodles to an oven safe skillet, then add in jar of queso, salt, & pepper + additional water to thin sauce.
- fold in lobster, then simmer on low-medium heat for ~8-10 minutes.
- to make bacon “breadcrumb”, add bacon & potato chips to a food processor & blitz a few times into a crumble.
- sprinkle bacon “breadcrumb” over mac & cheese & cover with aluminum foil.
- bake for 10-12 minutes, then remove foil & bake for another 8-10 minutes or until bacon “breadcrumbs” are golden brown; option to broil for last 2-3 minutes for extra crispiness.
