  1. Cook rigatoni according to package directions, reserving 1–2 cups of pasta water.
  2. In a medium pan, heat 1 tbsp olive oil over medium. Cook sausage, breaking it into chunks; set aside.
  3. In the same pan, sauté onion, fennel, and garlic until tender. Season with salt, then return sausage to pan.
  4. Add the zest of 1 lemon, 1 cup pasta water, juice of 1 lemon, and ⅓ cup parmesan. Reduce heat to low.
  5. Add pasta and kale, tossing until well-coated. Adjust sauce with additional pasta water, lemon juice, and parmesan as needed.
  6. Top with black pepper and extra parmesan before serving.
