Delicious grilled lamb burgers made using US Wellness Meats Ground Lamb, grilled red onions, lettuce, tomatoes and a garlicky whipped feta makes this the perfect mediterranean bowl for summer. Why are french fries here? Many years ago on a trip to Greece a small little restaurant put french fries into our gyros and ever since then it's a favorite addition.

  • 12 oz cherry tomatoes, cut in half
  • 1 bunch Butter Lettuce
  • 1 whole Cucumber, use a smaller one, slice or cut into pieces
  • 0.5 Frozen French Fries, use 1/2 of the bag

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Whipped Feta
  2. To a food processor add 8oz of feta cheese, 5.3 oz of greek yogurt, the zest of 1 lemon, 1tsp of lemon juice, and 1 medium garlic clove. Mix until combined then add 4 tsp of the extra virgin olive oil. Mix again scraping the bowl as needed until the feta/yogurt mixture is smooth about 5-6 minutes. Set aside.
  3. Make the Lamb Burgers
  4. In a medium size bowl combine the ground lamb, 1 tsp of garlic powder, 1/2 tsp of onion powder, 1 tsp of salt, 1/4 tsp of black pepper and 1/2 tsp of dried oregano. Mix well and shape into 4 patties approximately 4 oz each.
  5. Cut the red onion into thick slices, then place them into a bowl. Drizzle the slices with 2 tbsp of extra virgin olive oil and sprinkle them with salt and pepper if desired. Gently mix until combined.
  6. Pre-heat the oven to 425°F. Place half of the bag of french fries onto the baking sheet and cook to package directions.
  7. Grill the burgers over direct medium heat flipping as needed until cooked to your preference (160°F is well done).
  8. While the burgers are cooking place the red onions on the grill and cook flipping regularly until they are soft and charred, about 4-5 minutes.
  9. Assemble the bowls
  10. Place a handful of lettuce into a bowl then top with the lamb burgers, tomatoes, cucumbers, grilled red onions, and a large spoonful of the whipped feta.
  11. Drizzle a bit of extra virgin olive oil over everything and add a squish of lemon over it if desired.

Notes

You will have extra whipped feta.
