Mediterranean Lamb Bowl
Delicious grilled lamb burgers made using US Wellness Meats Ground Lamb, grilled red onions, lettuce, tomatoes and a garlicky whipped feta makes this the perfect mediterranean bowl for summer. Why are french fries here? Many years ago on a trip to Greece a small little restaurant put french fries into our gyros and ever since then it's a favorite addition.
Ingredients
Lamb Burgers
- 1 lb1 lb1 lb Ground Lamb - US Wellness Meats

- 1 tsp1 tsp1 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 1 tsp1 tsp1 tsp Sea Salt

- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

- 0.5 tsp0.5 tsp0.5 tsp Oregano, Dried

- 1 whole1 whole1 whole Red Onion, cut into thick slices
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
Whipped Feta
- 8 oz8 oz8 oz Feta Cheese, get the whole block and not the crumbles
- 5.3 oz5.3 oz5.3 oz Plain Greek Yogurt, 1 small container
- 1 whole1 whole1 whole Lemon Zest, zest the whole lemon
- 1 tsp1 tsp1 tsp Lemon Juice
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

- 1 clove1 clove1 clove Garlic, Medium in size

- 4 Tbsp4 Tbsp4 Tbsp Extra Virgin Olive Oil
Toppings
- 12 oz12 oz12 oz cherry tomatoes, cut in half
- 1 bunch1 bunch1 bunch Butter Lettuce
- 1 whole1 whole1 whole Cucumber, use a smaller one, slice or cut into pieces
- 0.50.50.5 Frozen French Fries, use 1/2 of the bag

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whipped Feta
- To a food processor add 8oz of feta cheese, 5.3 oz of greek yogurt, the zest of 1 lemon, 1tsp of lemon juice, and 1 medium garlic clove. Mix until combined then add 4 tsp of the extra virgin olive oil. Mix again scraping the bowl as needed until the feta/yogurt mixture is smooth about 5-6 minutes. Set aside.
- Make the Lamb Burgers
- In a medium size bowl combine the ground lamb, 1 tsp of garlic powder, 1/2 tsp of onion powder, 1 tsp of salt, 1/4 tsp of black pepper and 1/2 tsp of dried oregano. Mix well and shape into 4 patties approximately 4 oz each.
- Cut the red onion into thick slices, then place them into a bowl. Drizzle the slices with 2 tbsp of extra virgin olive oil and sprinkle them with salt and pepper if desired. Gently mix until combined.
- Pre-heat the oven to 425°F. Place half of the bag of french fries onto the baking sheet and cook to package directions.
- Grill the burgers over direct medium heat flipping as needed until cooked to your preference (160°F is well done).
- While the burgers are cooking place the red onions on the grill and cook flipping regularly until they are soft and charred, about 4-5 minutes.
- Assemble the bowls
- Place a handful of lettuce into a bowl then top with the lamb burgers, tomatoes, cucumbers, grilled red onions, and a large spoonful of the whipped feta.
- Drizzle a bit of extra virgin olive oil over everything and add a squish of lemon over it if desired.
Notes
You will have extra whipped feta.
