Vegan Chicken Caesar Wraps
These Vegan Chicken Caesar Wraps are a delicious plant-based take on a classic Caesar wrap. Crisp romaine, crushed croutons, dairy-free Parmesan, and meaty Soy Curl
- Soy curl chicken: I used my Soy Curl Chicken recipe, which has a tender, meaty texture and savory flavor that works really well in these wraps. For a quicker option, use your favorite store-bought vegan chicken strips.
- Dressing: The Caesar dressing makes about 1¼ cups. After tossing ½ cup of dressing with the salad, you’ll have about 3 tablespoons of dressing per wrap left for dipping. Store any leftover dressing in a jar or airtight container in the fridge for up to 1 week. For a shortcut, you can also use your favorite store-bought vegan Caesar dressing.
- Storage: For the best texture, assemble the wraps just before serving. The lettuce and Parmesan can be stored together, while the croutons and Caesar dressing should be kept separate until you're ready to toss the salad together and assemble. Store the prepared soy curl chicken in the fridge for up to 5 days and warm it before assembling, if desired. If already assembled, wraps can be stored in an airtight container in the fridge for up to 1 day, though the tortilla and croutons may soften.
