Nightshade Free BBQ Sauce (Whole30, Vegan)
When I tasted this BBQ sauce the first time I made it, a single tear rolled down my cheek. If you can't have nightshades, you understand the pain of losing beloved foods like BBQ sauce. This recipe tastes identical to BBQ sauce. It's the smokiest, most authentic flavor I've ever tried in a nightshade-free version. And it's paleo, vegan, and Whole30 compatible!
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil, (or cooking fat of choice, like ghee)
- 1 cup1 cup1 cup Onion, roughly chopped
- 1/2 cup1/2 cup1/2 cup Carrots, roughly chopped
- 444 Medjool Dates, med/large, pitted and roughly chopped
- 2-3 cloves2-3 cloves2-3 cloves Garlic, roughly chopped
- 1 tsp1 tsp1 tsp Instant Coffee
- 2 tsp2 tsp2 tsp Dijon Mustard
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 tsp1 tsp1 tsp Smoked Sea Salt
- 3/4 cup3/4 cup3/4 cup unsweetened Apple Juice, divided (1/2 cup and 1/4 cup)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sauté onion and carrots in cooking fat on medium heat until onions have a little color, about 10 minutes.
- Add garlic and dates, and sauté for another 3-4 minutes, until the dates break down and the mixture starts to look sticky.
- Turn heat to low and add apple cider vinegar, lemon juice, 1/2 cup apple juice, smoked salt, and instant coffee.
- Stir to combine and let simmer until thickened, about 10 minutes.
- Carefully add to blender with remaining 1/4 cup apple juice and blend until smooth.
- Slather onto meat before baking or grilling, use as a dip, or use however you prefer your BBQ sauce!
