No-Bake PB&J Protein Cups
These easy no-bake PB&J protein cups are going to be your new favorite snack. Packed full of protein, fiber, and nourishing fats, they come together in 10 minutes with only 7 ingredients. Not a raspberry fan? Swap it out for blueberries or another fav fruit combo.
Ingredients
- 0.25 cup0.25 cup0.25 cup Peanut Butter
- 0.25 cup0.25 cup0.25 cup Honey, can sub maple syrup
- 0.5 cup0.5 cup0.5 cup Gluten Free Rolled Oats
- 0.5 cup0.5 cup0.5 cup Puffed Rice, can sub crispy rice cereal
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder
- 0.2 tsp0.2 tsp0.2 tsp Salt
- 0.5 cup0.5 cup0.5 cup Organic Raspberries, can use fresh or frozen
- 0.5 cup0.5 cup0.5 cup Dark Chocolate Chips, melted

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare a cupcake pan with 6 cupcake wrappers. You can also use a silicone mold.
- In a large bowl combine the peanut butter and honey and mix until smooth.
- Add in the oats, rice cereal, protein powder, and salt and mix until well combined.
- Gently fold in the raspberries until just combined.
- Divide the mixture evenly into cupcake wrappers and firmly press down.
- Top each protein cup with melted chocolate and spread evenly. Sprinkle on additional coarse sea salt if desired.
- Place in the fridge and allow to chill until set. Enjoy!
- Store leftover protein cups in an airtight container in the fridge for up to 5 days or frozen for up to 6 months.
