one-skillet low-carb chicken fried rice… a takeout classic with a healthy upgrade. 🍚✨
instead of traditional rice, i used hearts of palm rice or cauliflower rice for a low-carb swap that still gives you that satisfying fried rice texture.
packed with protein, loaded with veggies, naturally gluten-free, & ready in about 15 minutes, this is the perfect quick weeknight dinner or meal prep recipe.
simple. flavorful. filling. & a healthier way to enjoy one of my favorite takeout classics.

Ingredients
- 1.5 lb1.5 lb1.5 lb Chicken Thighs, Boneless Skinless, diced into ½” cubes

- Salt and Pepper
- 16-24 oz16-24 oz16-24 oz Stir-Fry Vegetables, Frozen, may sub peas & carrots
- 14 oz14 oz14 oz Hearts of Palm Rice, 2 bags
- 3-43-43-4 Eggs
- 6-86-86-8 oven-baked bacon (click for recipe), finely chopped
- Sesame Seeds, for garnishing
- 2 tsp2 tsp2 tsp Sesame Oil

- 2 Tbsp2 Tbsp2 Tbsp Rice Wine Vinegar
- 3-4 Tbsp3-4 Tbsp3-4 Tbsp Coconut Aminos, or tamari
- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste

- 1/4 cup1/4 cup1/4 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1.5 tsp1.5 tsp1.5 tsp Ginger Cilantro Seasoning - Primal Palate, or any seasonings you like!

- .5 tsp.5 tsp.5 tsp Garlic Powder

- Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a bowl, season the chicken with salt & pepper.
- heat a large skillet with a little avocado oil, then add chicken & cook until done (may need to work in batches).
- remove chicken from skillet, then add stir-fry veggies.
- cook for ~8-10 minutes or until moisture starts to evaporate.
- add in hearts of palm rice & cook for another 5-6 minutes.
- create a well in the center, then add in whisked eggs & scramble.
- mix in chicken & bacon.
- in a bowl, whisk together all sauce mixture, then pour over top.
- cook for another 5-6 minutes on low heat.
- garnish with sesame seeds + serve with extra tamari or coconut aminos & enjoy!
