open-faced apple & bacon tuna melt (Edit recipe)

ooey, gooey, melty cheese. count me in! pepper jack is my go to cheese for a tuna melt (& pretty much every cheesy recipe). it mixes all the flavors of sweet, spicy, savory, & DELICIOUS!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a small bowl, combine tuna, yogurt, mustard, monk fruit, vinegar, apple, bacon, salt, & pepper.
  2. option to warm in microwave for 30-60 seconds.
  3. to a slice of bread, add tuna mixture, cheese, & red pepper flakes.
  4. add tuna melt to a skillet over medium heat for 2-3 minutes to “toast” bottom of bread, then add a lid to the skillet to melt the cheese.
  5. serve with a veggie side.
