who doesn't love a good cookie? a good ole' classic chocolate chip is hard to beat, but a monster cookie is a close second. i boosted the nutrients on a typical cookie by adding some protein & fiber + found some great sugar-free alternatives thanks to one of my FAVORITE brands - lakanto! P.S. if you smear a little peanut butter on these, you can make a monster cookie sandwich - yum!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 350.
  2. in a bowl, mash bananas, then whisk in eggs, vanilla, extract, & peanut butter.
  3. add oats, hemp hearts, & protein powder to liquid mixture & mix.
  4. fold in chocolate gems & chips.
  5. scoop out cookies using a small or large cookie scoop, then top with flaky sea salt.
  6. bake for 13-15 minutes.
  7. once done cooking, option to use a round object to get cookies into more of a circle shape.
  8. allow to cool & enjoy!
