  1. Line a small baking dish or sheet with parchment paper.
  2. Pit and slice the Medjool dates. Spread evenly on the parchment paper to create the base layer pressing firmly to flatten
  3. Add Peanut Butter Layer
  4. Spread the peanut butter mixture evenly over the date layer.
  5. In a microwave-safe bowl, melt the dark chocolate chips with the coconut oil in 30-second intervals, stirring in between, until fully melted and smooth.
  6. Pour the melted chocolate over the peanut butter layer and spread evenly.
  7. Optionally, sprinkle a pinch of sea salt on top for added flavor.
  8. Place the bark in the freezer for about 1 hour, or until the chocolate is firm and the layers are set.
  9. Once set, remove from the freezer, break into bite-sized squares or bars, and enjoy!
  10. Keep in an airtight container in the fridge or freezer for up to two weeks.
