Protein Cookies N Cream Cheesecake
Protein rich and naturally sweetened cheesecake! With a chocolate cookie base, a silky cheesecake filling with crushed cookies, and a velvety smooth chocolate ganache coating. You'd have NO idea this cheesecake is better for you!
Ingredients
Base
- 1.5 cups1.5 cups1.5 cups Honey Cinnamon Sweet Thins - Simple Mills, Chocolate version, it choc graham crackers
- 2 Tbsp2 Tbsp2 Tbsp Maple Syrup, Pure
- .25 cup.25 cup.25 cup Butter, Unsalted, Melted
Cheesecake
- 16 oz16 oz16 oz Cottage Cheese
- 1 cup1 cup1 cup Plain Greek Yogurt
- 8 oz8 oz8 oz Cream Cheese, Full Fat
- .5 cup.5 cup.5 cup Maple Syrup, Pure
- 3 whole3 whole3 whole Egg
- 3 Tbsp3 Tbsp3 Tbsp Vanilla Protein Powder, Or all purpose / gf flour
- 2 tsp2 tsp2 tsp Lemon Juice
- 1 tsp1 tsp1 tsp Vanilla Extract
- 8 whole8 whole8 whole Double Chocolate Crunchy Cookies - Simple Mills, Or their healthier "oreos"
Ganache
- .5 cup.5 cup.5 cup Creamy Peanut Butter
- .25 cup.25 cup.25 cup Dark Chocolate

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Process chocolate graham crackers until crumbs. Mix with melted butter and syrup, and press down into the bottom of a 9" springform pan
- Bake at 325 for 15min. Remove from oven and set aside to cool
- Add cheesecake ingredients to a food processor until smooth, then add cookies and pulse a few more times to combine
- Pour overtop base
- Pour boiling water on a baking sheet about 1" worth and place on bottom rack
- Place cheesecake on middle rack. This creates a steam bath and keeps the cheesecake from cracking
- Bake for 45-55min, until edges start to golden. The center will set more even after removed from the oven
- Allow to cool at least 30 min, then place in the fridge 4+ hours (overnight is fine)
- After at least 2 hours make your ganache by melting ingredients together until smooth
- Pour overtop cheesecake layer and place back in the fridge.
- If not leaving overnight then place in the freezer the last 45min so ganache fully sets and you're able to get a clean slice
- Keep stored in the fridge. can also be frozen, and allow to thaw overnight
