This recipe was inspired by hobbits tea time.  These tender flaky biscuits are great for dipping into your tea or any hot beverage. They are like a spiced shortcake texture that melts in your mouth.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350F/180C. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine flours, baking soda, chai spice and salt and set aside.
  3. In a large bowl, combine flax meal, chia seeds and 3 tbsp water, mix and set aside.
  4. Melt coconut oil in a small pot and pour over flax meal and chia seeds. Mix well. Add vanilla.
  5. Add flour mixture to wet ingredients until well combined. You will get a sticky like ball of dough.
  6. Using your hands, divide the dough into two sections, then divide again until you have 8 sections and roll into balls and place on baking sheet lined with parchment paper 2 inches apart.
  7. Bake at 350F for about 40 minutes or until a toothpick comes out clean. Cool on baking sheet.
  8. Enjoy with your favourite tea.
