Shrimp & Peach Kabobs (Edit recipe)

If you have some leftover Indian spices from another recipe, I want you to make these spicy, juicy Shrimp and Peach Kabobs this grilling season. They are Whole30 compatible and you can serve them with some Cauliflower rice, a small side salad, roasted potatoes & sliced Avocado for a complete meal. These kabobs are also Gluten-free, Dairy-free and Paleo-friendly.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Use 2 different bowls for the shrimp (raw, peeled and deveined) and peaches (sliced).
  2. To each of the bowls, add 1/4 Turmeric Powder, 1/2 tsp Red Chili Powder (or paprika), 1 tsp Cumin Powder, 1/2 tsp Salt, 1 tbsp freshly squeezed lemon juice and 1 tbsp Extra Virgin Olive Oil.
  3. Give that a good mix, ensuring the shrimp and peaches are well coated. Allow them to marinate for atleast half an hour.
  4. If using wooden skewers, soak them in water for half an hour as well.
  5. Then skewer the shrimp and peaches alternately, keeping some space in between.
  6. If using a grill pan, grease the pan using Extra Virgin Olive Oil. Grill kabobs 6-8 minutes on each side.
  7. Serve over Cauliflower rice paired with a side salad, roasted potatoes, sliced avocado and a couple slices of lemon for a complete meal. Enjoy!

Notes

While I used just shrimp and peaches in these kabobs, you can definitely add more veggies like rainbow bell peppers, asparagus, green onions, cherry tomatoes or even replace the peaches with pineapple. Feel free to adjust the spices based on your liking. You can also swap these spices with any other spice blends or store-bought dressings. Just make sure that the ingredients are Whole30 compatible if you are on a Whole30 round.
