spinach & artichoke loaded fries
spinach & artichoke dip, but made into a delicious meal. if you truly want to make it a one-dish meal, swap your potatoes for some delicious tortilla chips to dip the meat mixture with!
Ingredients
- 111 bacon, & avocado ranch loaded jicama fries bbq chicken (click for recipe), the BEST jicama fries from this recipe
- 1.5 lb1.5 lb1.5 lb Ground Turkey, or ground chicken
- 111 Onion, finely chopped
- 16 oz16 oz16 oz Baby Bella Mushrooms, sliced
- 5 oz5 oz5 oz Baby Spinach, chopped
- 111 Artichoke Hearts, drained & chopped
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 0.5 cup0.5 cup0.5 cup Organic Cottage Cheese
- 2 Tbsp2 Tbsp2 Tbsp Nutritional Yeast
- 1 tsp1 tsp1 tsp Italian Seasoning
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 111 Salt and Pepper, to taste
- 0.25 tsp0.25 tsp0.25 tsp Red Pepper Flakes, optional
- 3 - 4 oz3 - 4 oz3 - 4 oz Parmesan Cheese
- 3 - 4 oz3 - 4 oz3 - 4 oz Pepper Jack Cheese, or mozzarella

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- make fries of choice - I love making jicama fries, but feel free to make potatoes or other root veggie fries.
- while veggies are cooking, add ground meat to a skillet & brown.
- remove meat, then add onions & mushrooms; saute for 6-8 minutes.
- add in spinach & artichokes; cook for an additional 5-6 minutes.
- add ground meat, seasoning, greek yogurt, & half cheese to skillet.
- sprinkle remaining cheese on top, then bake skillet in oven for 15 minutes; broiling for last 3-5 minutes.
- lay down a bed of fries, then add on spinach & artichoke mixture over top.
