spinach & artichoke dip, but made into a delicious meal. if you truly want to make it a one-dish meal, swap your potatoes for some delicious tortilla chips to dip the meat mixture with!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 400.
  2. make fries of choice - I love making jicama fries, but feel free to make potatoes or other root veggie fries.
  3. while veggies are cooking, add ground meat to a skillet & brown.
  4. remove meat, then add onions & mushrooms; saute for 6-8 minutes.
  5. add in spinach & artichokes; cook for an additional 5-6 minutes.
  6. add ground meat, seasoning, greek yogurt, & half cheese to skillet.
  7. sprinkle remaining cheese on top, then bake skillet in oven for 15 minutes; broiling for last 3-5 minutes.
  8. lay down a bed of fries, then add on spinach & artichoke mixture over top.
