- Baby Bella Mushrooms, sliced
- Onion, sliced
- Himalayan Salt Veggie Pita Crackers - Simple Mills
- Radish, sliced
- Goat Cheese
- Mint Leaves, dried or fresh
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
pink whipped goat cheese dressing
- in a food processor, combine all ingredients for dressing, adding water to thin as needed.
- refrigerate until ready to serve.
strawberry chicken
- in a bowl, whisk together berry habanero jam, crushed strawberry vinegar, monk fruit, & seasonings.
- in a separate bowl, add chicken, starch, salt, & pepper.
- heat a large skillet with a little tallow or fat of choice, then add chicken & cook for 5-6 minutes.
- pour strawberry sauce on top of chicken & simmer for 8-10 minutes or until sauce thickens; adding any additional water as needed.
springtime nachos
- in a separate skillet, sauté mushrooms & onions (or any veggies you like).
- to build nachos, first start with a layer of simple mills pita crackers, then add on strawberry chicken, sautéed veggies, radishes, pink whipped goat cheese dressing, goat cheese, & fresh or dried mint.
