Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

meatball patties

  1. preheat oven to 400.
  2. first add granola to a food processor & blitz a few times into a finer crumble.
  3. to a bowl, add granola & remaining meatball ingredients.
  4. using a medium cookie scoop, make mini meatballs (~24) & smash into a flatter patty,
  5. place meatball patties on a lined baking dish, then bake for 12-15 minutes.

whipped cottage cheese

  1. add all ingredients to a food processor; mix until fluffy.

stone fruit compote

  1. follow the recipe for mixed berry compote, swapping the jam & fruits for the stone fruits.

pan-tinis

  1. in a skillet, reheat mini pancakes by “toasting” for 1-2 minutes on each side.
  2. on pancake, add whipped cottage cheese, stone fruits, meatball patties, stone fruit compote, & sprinkle with crispy prosciutto, granola, goat cheese, & herbs.
