Strawberry Shortcake Froyo Pops (gluten-free/high protein)
Stay cool in the summer heat with these delicious Strawberry Shortcake Froyo Pops! Made from a high protein base of just four simple ingredients, these popsicles are the perfect high protein treat and can easily be made vegan by using a graham cracker alternative!
Ingredients
- 1 cup1 cup1 cup Plain Greek Yogurt, use dairy-free, for vegan
- 0.5 cup0.5 cup0.5 cup Unsweetened Cashew Butter
- 0.25 cup0.25 cup0.25 cup Pea Protein Powder (unflavored), use unflavored, strawberry or vanilla protein
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup, use more for desired sweetness
- 0.5 cup0.5 cup0.5 cup Strawberries, chopped
- 0.5 cup0.5 cup0.5 cup Gluten Free (Pamela's) Graham Crackers, broken into pieces but not crushed
- 0.5 cup0.5 cup0.5 cup Graham Cracker Crumbs, use gluten-free, if needed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine yogurt, protein powder, cashew butter and maple syrup in a bowl.
- Stir in chopped strawberries & crumbled graham cracker.
- Add a spoonful of crushed graham cracker crumbs to the bottom of a popsicle mold.
- Top with yogurt filling.
- Insert popsicle sticks & freeze for 2 hours or until firm.
- Remove popsicles from mold & enjoy!
