Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl or container with a flat bottom add almond milk and heavy whipping cream
- In a separate bowl whisk together 2 eggs then pour into the milk mixture
- In a small bowl add your brown sugar, apple pie spice, vanilla extract and cinnamon sugar spice
- Mix this together then add to the milk mixture and mix again. This step helps the sugars and spices not to float to the top
- Grab one slice of sourdough bread and spread 3 tbsp of cold apple pie compote (see recipe) and place another slice of bread on top pushing it together
- In a large pan add 1 tbsp of butter and allow it to melt and bubble
- I personally like to cut the crust off of the bread and allow it to soak up the mixture so once it cooks it acts as a seal to keep the filling in
- Soak each side of the bread in the milk mixture for about 20 seconds each side
- Using a spatula place the French toast gently in the pan. Allow it to cook without being flipped for 6-7 minutes
- Flip to the other flat side for 6-7 minutes
- Lastly use your hands to stand up the French toast where the crust would be and cook for 3-4 minutes
- Cut diagonal and allow to rest
- Repeat for additional servings adding in more butter as needed
- Preheat the oven to 350 degrees
- Place French toast on a pan and cook for an additional 5 minutes for the perfect crunch
- Top with powdered sugar and even an additional sprinkle of apple pie spice and cinnamon sugar spice.
