Sugar Cookie Protein Bites
These easy no-bake sugar cookie protein bites are made with only a handful of healthy ingredients and can be made in one bowl in under 30 minutes! They are a great snack to energize your day and add in extra protein. They are especially perfect for the holiday season and taste like sugar cookie dough. Drooling!

These are seriously some of the best energy bites I've ever had. They are very tasty on their own as a snack or dessert, but they also pair well with a glass of (non-dairy) milk or coffee. I hope you enjoy this recipe!
Ingredients
- 1 cup1 cup1 cup Almond Flour
- 0.75 cup0.75 cup0.75 cup Oat Flour
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder, I like EarthChimp, can sub with more almond or oat flour
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 0.25 cup0.25 cup0.25 cup Cashew Butter, or almond butter
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil, melted
- 1 tsp1 tsp1 tsp Vanilla Extract
- 0.25 tsp0.25 tsp0.25 tsp Almond Extract
- 0.25 tsp0.25 tsp0.25 tsp Salt
- 2 tsp2 tsp2 tsp Sprinkles, to mix into the dough, optional
- 0.25 cup0.25 cup0.25 cup Pascha Organic Vegan White Baking Chips, Pascha chocolate keeps this recipe vegan and refined sugar free, but feel free to use your white chocolate chips of choice (*see Notes)
- 0.5 tsp0.5 tsp0.5 tsp Coconut Oil
- 1 tsp1 tsp1 tsp Sprinkles

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all ingredients to a large bowl and mix until completely combined. Roll into 12-15 balls.
- Melt white chocolate chips with coconut oil and dip the tops of the energy bites in melted chocolate. Add sprinkles.
- Refrigerate for about 10 minutes or until white chocolate has hardened. Enjoy right away or refrigerate for at least an hour to firm up more. Store in fridge or freezer. Enjoy!
Notes
The protein bites shown here are partially dipped in melted white chocolate. If you'd like to fully coat them to make truffles, then double the amount of white chocolate chips and coconut oil. Best if enjoyed within 1 week in the fridge or 2 months in the freezer.
