Supreme Pizza Casserole
High protein and full of fiber this low carb pizza casserole is full of veggies and so satisfying!
Ingredients
- 1 lb1 lb1 lb Ground Beef (93/7) - Thrive Market

- 1 whole1 whole1 whole Onion
- 1 whole1 whole1 whole Zucchini
- 8 oz8 oz8 oz Baby Bella Mushrooms
- 1 whole1 whole1 whole Bell Pepper

- 2 cloves2 cloves2 cloves Garlic

- 2 cups2 cups2 cups Cauliflower Rice, Frozen
- 24 oz24 oz24 oz Original Marinara - Yo Mama’s Foods

- 6 oz6 oz6 oz Pepperoni, Uncured
- 2 cups2 cups2 cups Mozzarella Cheese
- 1 tsp1 tsp1 tsp Organic Oregano - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Start by chopping your onion
- 2. In a skillet brown your ground beef and onion with some salt and pepper.
- 3. While your meat browns, wash and chop all your veggies.
- 4. In your casserole dish add your cauliflower rice, ground meat mixture, zucchini, mushrooms, bell pepper, minced garlic, oregano, salt and pepper to taste, marinera sauce and mix.
- 5. Top with cheese and pepperoni.
- 6. Bake in a 400 degree oven for 35 minutes covered. Remove the tin foil and bake for another 10 minutes or until your cheese is golden and pepperoni toasted.
Notes
1. You can substitute the ground beef for sausage. 2. If you love pepperoni I like to mix chopped pepperoni inside the casserole.
