Sweet Potato Chicken Nuggets
These Sweet Potato Chicken Nuggets are the perfect lunch or dinner item for your picky toddler. They are extra tasty and easy to make which means they will be a mom's best friend. They only call for 4 ingredients. They are high in protein and are made with a nutritious carbohydrate. I highly recommend making these for your kids! Chicken nuggets bought from the store can be filled with so many additives, so why not make your own with ingredients you know and trust!
Ingredients
- 2 whole2 whole2 whole Sweet Potato, Baked or Steamed
- 1 whole1 whole1 whole Egg
- 0.5 cup0.5 cup0.5 cup Chicken Breast, Shredded; you can used canned
- 1 tsp1 tsp1 tsp Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large mixing bowl, add your baked sweet potatoes (you want them softened before mixing) and your egg. Whisk together. Then add chicken breast and salt if you are not using canned chicken. Typically, canned chicken is salted already! Mix together until everything is combined.
- Once the mix is combined, roll batter into mini chicken nuggets or whatever size your kids prefer.
- Place chicken nuggets in an air fryer. Bake for 4-6 minutes at 370.
- Enjoy!
Notes
If you wanted to use an oven, you can do so! Place chicken nuggets on a baking pan and bake at 375 for 6-8 minutes!
