Thai Beef Basil Bowl (paleo)
This is a versatile bowl that allows for a lot of personalization. Packed with flavor and healthy ingredients yet quick enough for a weeknight.
Ingredients

- 1 Tbsp1 Tbsp1 Tbsp Olive Oil

- .5.5.5 Red Onion, Sliced
- 222 Carrots, Julienne
- 2 pieces2 pieces2 pieces Celery, Diced
- .5.5.5 Zucchini, Julienne
- 1 head1 head1 head Broccoli, Diced
- 1 cup1 cup1 cup Red Cabbage, Sliced
- 2 cloves2 cloves2 cloves Garlic, Minced

- 1 tsp1 tsp1 tsp Sea Salt

- .5 tsp.5 tsp.5 tsp Black Pepper

- .75 cup.75 cup.75 cup Beef Bone Broth

- .5 cup.5 cup.5 cup Coconut Aminos
- 1 Tbsp1 Tbsp1 Tbsp Fish Sauce
- 1 Tbsp1 Tbsp1 Tbsp Coconut Sugar

- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Powder
- 222 Green Onion (Scallion), Diced

- .25 cup.25 cup.25 cup Cashews, Roasted and Salted, Chopped
- 1 bunch1 bunch1 bunch Thai Basil, Sliced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large skillet book the beef in oil on medium heat, add salt and pepper. Break the meat apart and cook for 7-8 minutes until done.
- Add the onion, carrots, celery, zucchini, broccoli, cabbage, and garlic. Stir and cook for 5-6 minutes.
- In a small bowl mix the sauce ingredients and stir to blend.
- Pour into pan and stir to combine. Let cook for 3 minutes to heat up and thicken.
- Prepare toppings and set aside.
- In a bowl add the beef vegetable mixture and toppings.
Notes
You can serve this as is, or over rice, or cauliflower rice.
