If you're looking forward to Fall but want to hold onto one last bit of summer, this tomato basil orzo soup with sausage for protein is the perfect balance between the two. This soup is brothy but has lots of mix-in's so it's filling and satisfying. You can leave out the sausage to keep it lighter, or add it in for a more substantial meal. I can't wait for you to make this and see what you think!

  1. In a large pot, heat the olive oil.
  2. Add the onion, carrot, celery and garlic.
  3. Saute for about 5 minutes, until starting to soften.
  4. Add the tomatoes and broth.
  5. Bring to a boil. Reduce heat and let simmer for about 10 minutes.
  6. While letting the soup simmer, if adding sausage, cook in a separate pan until almost no longer pink.
  7. Add the orzo, cover again and let it simmer until the orzo is tender.
  8. If the soup is too dry after the orzo is cooked, add more broth or water.
  9. Season with salt and pepper to taste.
  10. When serving, top with fresh basil and parmesan cheese.
