Trader Joe’s Pesto Quinoa with Chicken Meatballs
Back with another Trader Joe's recipe, this time using their chicken meatballs and kale pesto. 🤤 Packed with protein and fiber, this light and easy-to-make pesto quinoa and chicken meatball recipe will become a weeknight fav!
Ingredients
- 1 cup1 cup1 cup Quinoa
- 1.75 cups1.75 cups1.75 cups Bone Broth
- 1 Tbsp1 Tbsp1 Tbsp Olive Oil
- 1 whole1 whole1 whole Shallot, finely chopped
- 2 cloves2 cloves2 cloves Garlic, minced
- 1 lb1 lb1 lb Chicken Meatballs - Trader Joe's
- .75 cup.75 cup.75 cup Vegan Kale, Cashew, & Basil Pesto - Trader Joe's
- 1 tsp1 tsp1 tsp Salt and Pepper, to taste
- 2 Tbsp2 Tbsp2 Tbsp Parmesan Cheese
- 2 Tbsp2 Tbsp2 Tbsp Basil, Fresh, chopped
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium pot, bring the bone broth and quinoa to a boil. Once boiling, reduce the heat to a simmer, cover, and cook for about 12-15 minutes or until the quinoa has absorbed the liquid and is tender. Remove the pot from the heat and set it aside, keeping it covered.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped shallots and cook for about 2-3 minutes, or until they begin to soften. Add the minced garlic and cook for another 30 seconds until fragrant, then add the mixture to the quinoa while it’s cooking.
- In the same skillet you used for the shallots, add a little more olive oil if needed and heat over medium-high. Add the meatballs and cook, turning occasionally, until they are browned on all sides and fully cooked through (about 6-8 minutes).
- Once the quinoa is done cooking, fluff it with a fork and then stir in the pesto. Season with salt and pepper to taste before dividing the pesto quinoa between bowls and topping with the chicken meatballs, parmesan cheese, and fresh basil.

The chicken meatballs I used are in the refrigerated section with the meats.
