Traditional Vietnamese Caramelized Fish | Keto Cá Kho Tộ
This is classic Vietnamese comfort food right here! A delicious, caramelized, braised dish made with fish that is sweet, savory, and spicy! Serve with cauliflower (fried) rice or keto friendly rice.
Ingredients
- 1 - 1.5 lb1 - 1.5 lb1 - 1.5 lb Catfish, cut into steaks, or basa steaks, fresh or frozen
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil, and/or pork fat, diced
- 6 cloves6 cloves6 cloves Garlic, minced

- 1 whole1 whole1 whole Onion, chopped
- 0.75 cups0.75 cups0.75 cups Allulose, adjust to taste

- 1 cup1 cup1 cup Water, plus more if needed
- 0.5 - 1 Tbsp0.5 - 1 Tbsp0.5 - 1 Tbsp White Vinegar, Distilled, or apple cider vinegar
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Wheat-Free Tamari

- 2 Tbsp2 Tbsp2 Tbsp Fish Sauce, Red Boat

- 1 tsp1 tsp1 tsp Sea Salt

- 1 - 2 whole1 - 2 whole1 - 2 whole Thai Chili, whole or sliced, optional
- 1 tsp1 tsp1 tsp Black Peppercorns, Ground Fresh

- 2 sprigs2 sprigs2 sprigs Green Onion (Scallion), chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl, sprinkle some sea salt onto the fish let sit for a couple of minutes. Rinse off the sea salt with water and set aside.
- To a preheated claypot or a saucepan on medium heat, add in the avocado oil and/or pork fat. Then, add in the garlic and onions. Sauté for 1-2 until fragrant.
- Add in the allulose and cook until dissolved and lightly brown.
- Add in the water, vinegar, Tamari, fish sauce, sea salt and black pepper. Sauté lightly to combine the ingredients.
- Add in the fish steaks and chilies if using. Increase the heat to high and bring everything to a boil.
- Lower the heat to simmer and cook for 15-20 minutes, uncovered.
- Turn the fish steaks over and simmer for another 5-10 minutes. Add more water if needed and adjust seasonings to taste.
- Garnish with the chopped green onion and cook for 1-2 more minutes. If desired, add more freshly ground black pepper.
